Meet Chef Dave Mottershall, Head Chef at Red Shores!

Chef Dave Mottershall’s culinary career started at the young age of 14 when he began working as a dishwasher at a small restaurant in port Elgin, Ontario. The Chef there recognized a certain drive and offered him a position as a cook. It was there that he discovered his passion for food and went on to hone his skills at Georgian College. Upon earning his Professional Cooking Diploma, Chef Dave went on to obtain Red Seal Certification.

Next was a move was to the prestigious Fairmont Banff Springs Hotel in Banff, Alberta, where Chef Dave spent six years working through the various restaurants and production kitchens at the Springs, where he finished as the Restaurant Chef of Castello’s restaurante. It was then off to find a new challenge.

From there Chef Dave landed a position in Calgary as an assistant Chef Instructor at the Southern Alberta Institute of Technology. During this time he also worked at a Calgary Hot Spot Bonterra Trattoria.

After spending years in Western Canada, Chef Dave had always been curious as to what the East Coast had to offer, so it was off to PEI with a hunger for fresh seafood and knowledge of local cuisine. Here, on the Island Chef Dave has worked his way through numerous great dining establishments as a Sous Chef; Claddagh Oyster House, Lot 30, and JP Cuisine to name a few.

The summer of 2010 offered Chef Dave a once in a lifetime opportunity: to spend 4 months in the Queen Charlotte Islands as the Chef, overseeing the kitchen of Langara Fishing Lodge. Langara plays host to some of the Wealthiest Sport Fisherman in the World. One of the most amazing experiences of his life!

With the return of fall, Chef Dave returned to the island and have since been conducting cooking classes, and continuing to promote local food and suppliers. After 15 years of hard work, he was extremely excited to join the Red Shores team as Head Chef in late February.

Chef Dave and his culinary team always bring a positive, upbeat attitude, and an eagerness to promote local and fresh cuisine!

  • First Place at the Great BBQ Cook Off, Best Ribs, Fall Flavours Event
